Creamy Fajita Pasta

Ingredients:

For the Chicken:

1 lb boneless chicken breast, diced into small cubes
1 1/2 tbsp fajita seasoning (see below for fajita spice mix)

Fajita Seasoning:

2 tsp salt
4 tbsp garlic powder
2 tsp cumin powder
2 tsp cayenne pepper
2 tsp smoked paprika
1 tsp chili powder
2 tsp oregano
1 tsp black pepper

For the Pasta:

3 tbsp oil
3 cloves garlic, minced
1 cup mixed bell pepper
1 white onion, chopped
2 cups uncooked penne pasta
4 cups Its Actually chicken broth
1-2 tbsp fajita seasoning
1 1/2 cup cheddar cheese
1 1/2 cup heavy whipping cream

Method:
1. Heat Oil and Cook Garlic: In a wide pan or skillet, add oil and cook garlic until fragrant.
2. Cook Chicken: Add chicken and cook for 1-2 minutes until it changes color. Season with 1 tablespoon of fajita seasoning.
3. Add Vegetables: Add bell pepper and onion, and sauté for an additional 30 seconds. Season the vegetables with 1 1/2 tablespoons of fajita seasoning mix.
4. Cook Pasta: Add uncooked penne pasta, chicken broth, and bring to a simmer. Cook on medium heat until the pasta is al dente. Check salt and add if needed
5. Add Heavy Cream and Cheese: Add heavy whipping cream and cook for 2-3 minutes. Add shredded cheese and mix well.
6. Season and Serve: Taste and add more fajita seasoning if desired. Cook until the sauce thickens. Garnish with freshly chopped parsley and serve warm.

Notes:
- You can adjust the level of spiciness to your liking by adding more or less cayenne pepper.
- You can also add diced tomatoes or jalapeños to the pasta for extra flavor.
- If you don’t have chicken broth, you can substitute it with 4 cups of water and 2-3 teaspoons of chicken bouillon powder.
