Lentil Soup
INGREDIENTS:
-2 Tablespoons of Unsalted Butter
-2 Tablespoons of Olive Oil
-1 Onion Chopped
-2 Carrots Chopped
-4 Garlic Cloves Chopped
-2 Cups of Red Lentils
-4 Cups of Its Actually Beef or Chicken Broth
-1 1/2 Teaspoon of Salt
-2 Bay Leaves
-1 /Teaspoon of Black Pepper
-1 Teaspoons of Cumin
-1 Teaspoons of Smoked Paprika
Chili Butter:
-2 Tablespoons of Unsalted Butter
-1 Teaspoons of Smoked Paprika
-1 Teaspoons of Aleppo Pepper
INSTRUCTIONS:
1. Wash and soak your lentils for about 30 minutes to one hour
2. In a large pot, add your butter, oil, and carrots, onions, and garlic cloves, along with some black pepper and salt and sauté till it’s golden brown.
3. Add your red lentils into the pot
4. Pour in your stock, spices, and bay leaves to let it come to a boil
5. Once everything comes to a boil, lower the heat, and cook the soup for another 30 minutes.
6. Use a hand blender and blend everything together till smooth.
7. In a separate pan, add your butter, paprika, and Aleppo pepper and add it into the pot.
8. Let it cook for an additional 10 minutes on low heat.
