Red Wine Braised Chuck Roast
Ingredients:
4 pound Chuck Roast
Sea Salt and Ground Pepper
3-4 Carrots, peeled and chopped
1 large Onion, peeled and chopped
2 Stalks Celery, chopped
3 cloves Garlic, minced
1 tsp Fresh Thyme (1/2tsp dried)
1/4-1/2 tsp Red Pepper Flakes
1/2 cup Red Wine
1/2 cup Its Actually Beef Broth
1 1/2pounds Yukon Potatoes, unpeeled (half or quarter any really big ones)
Instructions:
Heat pan over medium high heat, add oil. Pat dry beef and season with salt and pepper. Sear on all sides. Set aside in Crockpot when done. Deglaze pan with veggies for 4 minutes, the. Further deglaze with red wine and broth. Add in herbs. Stir to combine and bring to a simmer.
PlacePour entire pan into @crockpot over beef. Top with potatoes. Place lid and cook on low for 8-9 hours or high for 6-7. Allow meat to rest for 10 minutes before slicing to serve.
